Hops: Wai-ti, Azacca, Calypso (Dry)
This one’s for the for the Islander inside all of us.
Islanders are famed for their kindness and the importance of family, so we wanted to create something that celebrated the South Pacific Islands and these noble traditions.
So, after a hot debrief with Manu Tuilagi, Telusa Veanu, Jordan Taufua and Ifereimi Boladau he learned about the flavours of the Islands, mangoes (best from neighbour’s gardens) plenty of passionfruit and wanted to make a NEPA. A visit to the hop merchant to hand selected (again we have the pictures to prove it!) we decided upon Wait-ti, Azacca and Calypso for the dry hopping.
Tasting Notes: Our NEPA has tropical flavours that bring contrasting flavours to pork dishes, chicken jambalaya and pork and chicken kebabs. Goes very well with cheeses like Apricot Wensleydale.
